Tasty Tuesday!

Chocolate Trifle

Ingredients:

1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy (I used Heath Bar pieces)


Directions:


Prepare brownie mix according to package directions and cool completely.
Cut into 1 inch squares.
In a large bowl, combine pudding mix, water and sweetened condensed milk.
Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
In a trifle bowl or glass serving dish, place half of the brownies,
half of the pudding mixture and half of the 12 ounce container of whipped topping.
Repeat layers. Shave chocolate onto top layer for garnish.
Refrigerate 8 hours before serving.

This is my go to desert! Always goes quick!

Friday Fill In's 2/6/2009

1. Please don't tell me it's another poop!!!.
2. Can you PLEASE have my coffee ready in the morning?
3. The color pink makes me think of Katy!
4. I have a craving for chocolate.
5. If my life had a pause button, I'd pause it so my babies would stay babies.
6. Eyes are the first thing I notice.
7. And as for the weekend, tonight I'm looking forward to Katy's gym class tomorrow my plans include visiting with an old friend and Sunday, I want to scrapbook!

Tubby Time!

Today Katy had her1st tubby in the big tub! At first she wasn't very happy to be in it. After she learned bubbles were fun, but not as much fun as splashing mommy and daddy she was having a ball! She cried when it was time to get out!

Tubby Time

Patrick was not a huge fan of his 1st bath. He hated it as much as he hated his sponge baths. Poor little guy! Although, he smelled soo good afterwards!

Tasty Tuesday

Best Blueberry Muffins

1 ½ C. Flour ¾ C. Sugar
½ tsp. Salt 2 tsp. Baking Powder
1/3 C. Oil 1 Egg
1/3 C. Milk 1 C . Fresh Blueberries
½ C. Sugar 1/3 C. Flour
¼ C. Butter Cubed 1 ½ tsp. Cinnamon

Combine flour, ¾ C. sugar, salt, and baking powder. Add oil, egg and milk to flour mixture. Add blueberries. Fill Muffin Cups.

In a small bowl mix ½ C. Sugar, 1/3 C. Flour, Cubed Butter and Cinnamon.

Sprinkle on top of muffins

Bake @ 400ยบ for 25 minutes.

Patrick's 1st Photo Shoot!

Tasty Tuesday!

So, my friend Sarah posted a blog challenge. Tasty Tuesday! I don't have all the details...but I am running with my take on it. Basically post a recipe every Tuesday! As you know... I am not the head chef in our family. My wonderful husband keeps us fed the majority of the time. However, I do love to collect recipes. Sometimes I even prepare one or two myself. Always a special treat for Mike to find me in the kitchen. Now with my new roll as a SAHM...I may have to do more of the cooking! We'll see! This is a recipe I found online... it was DELISH!

Grilled Chicken Pasta

2lbs, Chicken Breasts Montreal Steak Seasoning
1 lb Penne Pasta

4 TBS Butter
4 TBS Olive Oil

5 Cloves Minced Garlic
1 C. Chicken Stock

16 oz. Can Tomato Sauce
2 C. Heavy Cream

8-10 Fresh Basil Leaves
Salt & Pepper to taste


Rinse chicken breasts in cold water, layer between sheets of wax paper and pound to even thickness.

Season both sides with Montreal Steak Seasoning

Preheat grill for medium heat, grill chicken on medium-high heat for 6-8 minutes each side. Set aside to cool.

Cook penne pasta according to package.

Heat butter and oil in a skillet over medium heat, add garlic and cook until tender. Do not let garlic turn brown. Add the chicken broth to the pan and reduce by half. Once the broth has reduced, stir in tomato sauce. Add cream, and stir well, season with salt & pepper. Turn heat to low. Chop basil, add to sauce and mix well.

Drain pasta, and add to sauce. Stir well to coat, top with sliced chicken.

Kathryn is really too young to understand what is going on. She really could care less...although we did get her to give him a kiss today...she much prefers to just take his hat off!

January 12 of 12

12 of 12 is a scrapbooking challenge I joined this year. The idea is that you take 12 photos on the 12th day of every month. As a way to document your day to day happenings. Since I am running about a year behind on my Family albums...my photos will be taken and posted to this blog...someday they will be printed and scrapbooked, but for now this will do!

Friday Fill In

Katie or Katy...

...that was the question. Mike and I have contemplated for the past year how we wanted to spell her nick name. We we went with the more common spelling of
K A T I E for the 1st year. We recently decided that we think K A T Y is a more fitting spelling for our Kathryn! I think its cuter... Mike thinks it makes more sense given the spelling we chose for Kathryn. So from this point forward we will go with KATY.
