Steak Tips & Roasted Potatoes

1 ½ lb. Steak Tips
6-8 Medium Potatoes
1 small can of peas
1 small can of corn
Vegetable Oil

Peel, and cube potatoes. Place in roasting pan, coat with oil. Bake @ 350º for 45 minutes, stir potatoes every 15 minutes.
Cut steak into 1 inch cubes. Add steak to potatoes cook for 10 minutes.
Add corn and peas, cook for 5-10 minutes more.
Serve with A1 sauce.

This is a Mike Original... I think it may have come from his mom. I am not a fan of canned veggies, but for this meal it work. I HATE peas, so we put peas down one end of the pan and corn down the opposite. Enjoy!

Happy Anniversay!

Seven years ago today, I became Mrs. Michael F. Murphy. One of the best days of my life (besides the birth of our children) Seven years doesn't seem like that long some days, others it feels like a lifetime!

Mike and I have been through a lot in 7 years, more then most couples ever experience. 6.5 years of intense infertility. By intense I mean we were actively trying... medical interventions, not just leaving it up to god. Those were some very difficult years. Me & hormone therapy do not work well together... I was difficult to live with. 3 miscarriages, an ectopic pregnancy, numerous surgeries.

I often think that if I wasn't married to Mike... I probably wouldn't have had the chance to become a mom. I don't know many men who would have been so kind, caring and understanding, who would have supported me through this hell.

It just goes to show how badly he wanted children for us. Instead of our troubles tearing us a part as they do many couples.

They brought us closer. We have an amazing bond and marriage. He really is my best friend. I know as long as I have him by my side, we can handle anything thrown at us.

Valentine's Day at our House!

Valentine's Day was spent loving on all my Valentine's ( and they did some loving on me! :) ) We started the day with heart shaped pancakes! We had gifts and Valentine's throughout the day! Once the kids were in bed... Mike and I had a romantic dinner! ( I even had a glass of wine!) The we cuddled and watched Mama Mia! with Cheesecake from The Cheesecake Factory!

It was a perfect day! With my perfect family!

Chocolate Trifle

Ingredients:

1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy (I used Heath Bar pieces)


Directions:


Prepare brownie mix according to package directions and cool completely.
Cut into 1 inch squares.
In a large bowl, combine pudding mix, water and sweetened condensed milk.
Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
In a trifle bowl or glass serving dish, place half of the brownies,
half of the pudding mixture and half of the 12 ounce container of whipped topping.
Repeat layers. Shave chocolate onto top layer for garnish.
Refrigerate 8 hours before serving.

This is my go to desert! Always goes quick!

Friday Fill In's 2/6/2009

1. Please don't tell me it's another poop!!!.
2. Can you PLEASE have my coffee ready in the morning?
3. The color pink makes me think of Katy!
4. I have a craving for chocolate.
5. If my life had a pause button, I'd pause it so my babies would stay babies.
6. Eyes are the first thing I notice.
7. And as for the weekend, tonight I'm looking forward to Katy's gym class tomorrow my plans include visiting with an old friend and Sunday, I want to scrapbook!

Tubby Time!

Today Katy had her1st tubby in the big tub! At first she wasn't very happy to be in it. After she learned bubbles were fun, but not as much fun as splashing mommy and daddy she was having a ball! She cried when it was time to get out!

Patrick was not a huge fan of his 1st bath. He hated it as much as he hated his sponge baths. Poor little guy! Although, he smelled soo good afterwards!

Tasty Tuesday

Best Blueberry Muffins

1 ½ C. Flour ¾ C. Sugar
½ tsp. Salt 2 tsp. Baking Powder
1/3 C. Oil 1 Egg
1/3 C. Milk 1 C . Fresh Blueberries
½ C. Sugar 1/3 C. Flour
¼ C. Butter Cubed 1 ½ tsp. Cinnamon

Combine flour, ¾ C. sugar, salt, and baking powder. Add oil, egg and milk to flour mixture. Add blueberries. Fill Muffin Cups.

In a small bowl mix ½ C. Sugar, 1/3 C. Flour, Cubed Butter and Cinnamon.

Sprinkle on top of muffins

Bake @ 400º for 25 minutes.

Superbowl Suday!

We were a little disappointed the The Patriots weren't in the Superbowl, for Patrick's 1st Superbowl Sunday! However our little guy did enjoy watching the commericals!!!
